- In a large jar or mixing bowl, combine 1 cup of rolled oats, 1 cup of unsweetened almond milk, ½ cup of vanilla Greek yogurt, 2 tablespoons of chia seeds, 2 tablespoons of maple syrup, and 1 teaspoon of vanilla extract. Mash 1 ripe banana and mix it in until everything is well combined.
- Seal the jar or cover the bowl with plastic wrap, then place it in the refrigerator for at least 4 to 6 hours, or ideally overnight.
- In the morning, give the mixture a good stir. If it’s too thick, add a splash of almond milk.
- Sprinkle crushed graham crackers over the top and add sliced bananas for garnish. Finish with whipped topping if desired.
